I just made this in an attempt to reproduce a salad I bought at the health food store. I think mine is better.
Greekish Salad
A jar of marinated quartered artichokes* Half of a small can of sliced black olives half of a chopped cucumber a handful of grape tomatoes cut in half some onion chopped some lemon juice some olive oil FETA cheese - I used herb and tomato feta**
Mix it all up. It's wonderful.
*It would be cheaper to marinate your own artichokes in olive oil, lemon juice, basil, etc. ** FETA is in all caps because it's a must-use.

A couple of pepperoncini cut in thin slices (seeds removed) are also nice, if you want to add a tiny bit of heat.
My wife likes to add garbanzo beans.
The other nice touch is some cutup wedges of warm pita bread on the side.

Yes, I thought about chick peas, PIA, and of course warm pita. Peperoncini -- I generally take it out instead of putting it in.

Thanks EmmaG for the salad recipe. I plan on making it tomorrow. When it comes to lemon juice, I'm a purist and always squeeze mine fresh which makes a big difference on the final taste as opposed to using RealLemon products etc. Your idea for prepping one's own artichokes is also appreciated for folks that need to watch their sodium intake such as myself. Mostly anything commercial that comes in a jar has some form of unneeded sodium.

That jar had 320 mg of sodium, so you're right, Carl. I should have been watching that but I was being lazy. Although you might be able to buy low or lower sodium artichokes in a can, just not marinated.
