Something for Mick~

1 cup white beans
1 cup kidney beans or pinto beans
1 cup black beans
1 small onion diced
1 can diced tomatoes
1 clove garlic crushed
1 jalapeno, Serrano or New Mexican chili seeded and chopped(more if you want to be reckless)
1 teaspoon red chili powder
1 small bunch chopped cilantro
1/2 teaspoon crushed Mexican oregano
Juice of 1/2 lime
3 cups vegetable broth or stock
Salt and pepper to taste

Soak beans overnight and drain

In a stock pot or dutch oven, heat two tablespoons of olive oil. add chopped onion and garlic cook to a sweat, Add tomatoes, broth, oregano, cilantro, lime juice, chili peppers, chili powder salt and pepper and bring to a boil.

Add beans and turn down flame to simmer, checking periodically until beans are tender. This can also be done in a crockpot. Garnish with sliced black olives and serve with tortillas(corn or flour, sour cream and guacamole. Flan makes a great dessert with this.

You can add chicken or beef to this, if veggies alone don't float your boat. Just cube some chicken breast or sirloin, cook and add with the beans.
