I love hearing what you guys are eating! Mick, yours of course is especially intriguing. I know you said your wife loves preparing food (note I didn't say cooking ), but wow she must stay in the kitchen a lot! You've given up meat all the way? I'm not much of a coffee drinker (just a cup or two in the morning but can do without) but it's big here. We have two notable free trade local roaster companies.

For the Vegetarians/vegans, I make a veggie soup.
Scoutgal's Veggie Soup
You can use frozen or fresh for this recipe. Canned would be a very last resort.
2 carrots sliced 2 parsnips sliced 2 stalks celery sliced 2 red rose potatoes cubed 1 head of kale or cabbage, cut into bite-sized pieces 1 cup of peas 1 cup green bens cur intoo bite-sized pieces 1 cup lima or white beans 1 cup kidney beans Three to four cups of vegetable broth or stock-enough to cover the veggies 1 tablespoon chopped parsley 1/2 teaspoon poultry seasoning(the herb-only kind) 2 cloves of garlic, crushed Salt and pepper to taste-I like ground white pepper in this dish.
2 tablespoons flour.
Put all ingredients in a stock or stew pot, reserving one cup of broth. Stir flour into remaining broth until desolved-no lumps. Add to soup(this step can be left out, if you do not like thicker soups-just add all the broth at the same time).
Simmer until veggies are tender.
I serve this with sourdough or french bread and a fresh fruit salad. Any of the vegetables can be shanged to suit individual taste.

A great salad
1 cucumber sliced 1 large tomato-roma or beefsteak, cut into small wedges 1 small red onin peeled and sliced lemon juice extra virgin olive oil Italian herbs Feta cheese crumbles(optional)
prepare the oil and lemon juice to taste and add 1/2 teaspoon of Italian herbs, let sit while you cut up the cucumber, tomato and onion.
Pour into a bowl, toss with dressing and chill for at least an hour. When ready to eat, sprinkle feta cheese crumbles on top and serve.

I love that salad. I also add black olives and sometimes artichokes. Definitely the feta.

Something for Mick~
1 cup white beans 1 cup kidney beans or pinto beans 1 cup black beans 1 small onion diced 1 can diced tomatoes 1 clove garlic crushed 1 jalapeno, Serrano or New Mexican chili seeded and chopped(more if you want to be reckless) 1 teaspoon red chili powder 1 small bunch chopped cilantro 1/2 teaspoon crushed Mexican oregano Juice of 1/2 lime 3 cups vegetable broth or stock Salt and pepper to taste
Soak beans overnight and drain
In a stock pot or dutch oven, heat two tablespoons of olive oil. add chopped onion and garlic cook to a sweat, Add tomatoes, broth, oregano, cilantro, lime juice, chili peppers, chili powder salt and pepper and bring to a boil.
Add beans and turn down flame to simmer, checking periodically until beans are tender. This can also be done in a crockpot. Garnish with sliced black olives and serve with tortillas(corn or flour, sour cream and guacamole. Flan makes a great dessert with this.
You can add chicken or beef to this, if veggies alone don't float your boat. Just cube some chicken breast or sirloin, cook and add with the beans.

She's in the kitchen for blocks of time, but never all day or all night. Just now she came in and took some nut tortillas out of the food dryer, looked at them and said, "They'll be ready in an hour." Then she went back to her computer. She loves doing it and it's not like cooking over a hot stove. Mostly it's chopping, blending or processing and/or drying. She has jars of nuts, seeds, and beans filled with water. A bowl or two of sprouts are covered and in the corner of the counter. After having taken 4 or 5 classes, including a couple at culinary arts school, she has begun teaching raw food classes at restaurants and other businesses. Soon she will market her nut cheeses. She does all that to relax from her day job. LOL! She'd love to do it full time. Maybe someday down the road. Meat and Mick have parted ways. I don't eat it anymore. I'm not saying I won't have a hamburger one day, but I don't really care for it and I don't want the chemicals. Raw and vegan...with coffee.
