Sockeye, aka Copper River salmon, has less fat than King, aka Chinook.

It all depends on the customer's preference.

...but Sockeye/Copper River AND King/Chinook are both wild salmons - which is a good thing.

Today I took 12 thighs (value pack), skinned the thighs.

Placed all 12 at the bottom of a crock pot.

Mixed:

1 can 14.5 oz chopped tomatoes

1 can tomato paste

1 tbs chopped garlic

1 chopped yellow onion

1 chopped green bell pepper

1/4 teaspoon Kosher salt and black pepper

Spread over chicken and will cook for 5 slow hours.

(Sammy is going into the kitchen, raising his nose, and sniffing the air around the crock pot. I know it's going to be good if my olfactory assistant likes what he smells).

And possibly basil? Served with pasta? I make a simple but very tasty chicken cacciatore in the crock pot that I serve with vermicelli (grated cheese optional). If you want to get your dog's attention some morning, fry some bacon and watch.

Awesome idea! Thanks Schlacky!!!!!!!

I should probably take about 3/4 cups of red wine and slow simmer it down (reduce it) AND THEN add it to the mixture before starting the crock for a concentrated wine flavor!

Im actually making something similar tonight except with pork tenderloin.

cut into rounds and beat flat

(i love beating my meat you know)

then fried in the pot, deglaze with the wine and reserve until later, fry off onions and peppers, add everything in, cover and simmer for a couple of hours.

Tonight I made meatloaf and I think I finally perfected it to the point it can be called gourmet. [Linked Image from i48.photobucket.com]

1 lb ground round
1/2 lb NY Sausage Co. Sweet Italian Sausage
3/4 cup of tomato soup
1 bell pepper, chopped
1 yellow onion, chopped
2 celery stalks, chopped
1/2 cup oatmeal

Saute bell pepper, onion and celery on low heat and sweat them for 10 minutes.

Add to rest of ingredients in a large mixing bowl. Mix throroughly.

Bake at 350 F for 1 hr.

Let rest 5 minutes
