I was going to roast beets once...got them home and couldn't deal with them. They looked like they'd been planted just below someone who bled to death.
Oddly, I can deal (less and less all the time) with raw meat; I'm used to it being blood-colored. But vegetables aren't supposed to be bloody. It's just...wrong.

Pickled Beets, Harvard Beets, Hot Buttered Beets, you can roast 'em and roll em in raw meat for me, I'm not what you'd call a picky eater...

I might could sort kinda try um, Rick, your way. I'd be willing maybe. I have to admit all I've ever been exposed to is processed beets, pickled, canned and all that (way ewwwwww!) because I've not at all been interested in trying to go there with beets. They are just nasty little buggers.

I'm a big fan of root veggies and the beet is the king of them all as far as nutrients are concerned. In fact it's one of the Worlds Healthiest Foods. That rich red color that grosses some of you out is actually very very good for you. As far as the flavor of beets, they are high in sugar and are always sweet with rich earthy overtones, okay, maybe they taste a little like sweet dirt but those of you who reek of onions shouldn't be dissing the rich, delicious, sweet beet!

I don't think the sugar in the Beets is much to be concerned about for most diabetics. I'm diabetic and I certainly don't worry about it. Worlds Healthiest Foods offers this warnibg though: Beets (notably beet greens) are among a small number of foods that contain measurable amounts of oxalates, naturally-occurring substances found in plants, animals, and human beings. When oxalates become too concentrated in body fluids, they can crystallize and cause health problems. For this reason, individuals with already existing and untreated kidney or gallbladder problems may want to avoid eating beets. Beets don't grow well here in Florida so fresh ones are quite a delicacy when I can get them. They are also damned expensive and seldom fresh. I'll be keeping my eyes open for them later in the season though, that Borscht looks mighty good.

ewwww....my Daddy used to make that! He was Russian. I did have a big slice of raw onion on my bagel for lunch though.
