I don't think the sugar in the Beets is much to be concerned about for most diabetics. I'm diabetic and I certainly don't worry about it. Worlds Healthiest Foods offers this warnibg though:

Beets don't grow well here in Florida so fresh ones are quite a delicacy when I can get them. They are also damned expensive and seldom fresh. I'll be keeping my eyes open for them later in the season though, that Borscht looks mighty good.
