I was going to roast beets once...got them home and couldn't deal with them.
I know, they are messy and stain everything: cutting board, etc.
...but now that it's spring, you can get yellow beets.
Anyhow...
Cut the skins off. Cube the beets. Drizzle olive oil and Kosher salt on them. Layer them on a cookie sheet. Bake at 350 oF for 45 mins. Cool, then refrigerate beets.
Toss field greens in your favorite vinaigrette. Top with chilled beets. Add crumbled goat cheese and toasted pumpkin seeds.
