I've done it. Take, say a cup of balsamic vinegar, and place it into a sauce pan and s-l-o-w-l-y reduce it down. It takes a long time.

What happens is the sugars in the vinegar concentrate and becomes viscous (syrup-like) and you can drizzle it over some Heirloom tomatoes that have been dipped in olive oil and Kosher salt.

It's pretty awesome.

I kinda thought the same thing , Rick. Sounds like too much sugar. If I made it, which isn't likely, I think I'd substitute Jiffy Cornbread Mix, it makes awful cornbread that's too sweet and too crumbly but it might tone this recipe down a little bit.

Last night I Started with Spring Rolls, then had a Thai Glass Noodle Salad, rolled up in Romaine Leaves(three stars, I started sweating) Then cut a Red Snapper Fillet into one inch cubes, breaded and deep fried them. Chef Rudee made me a special Red Curry sauce with lots of Bamboo Shoots to smother the fish.(four stars, brought tears to my eyes)
served with lightly steamed vegetable medley and two Singha Beers. Then a coke, then some water, I don't think I'll ever advance to 5 stars.

See? That's the point. You'd change it from weird contrasting tastes but remarkably good comfort food to something else altogether.
And maybe for you that would be a good thing.

I dunno. I agree on paper it doesn't work but in "real" life at least for me it did.
The cake mix is sweet but it's tempered by the meat taste (however you describe that) and the tart of the apples and then the two different kinds of potatoes....white and sweet. The batter puffs up of course as the other stuff cooks down and it all kind of mixes together for a very unique and homey taste.
Probably not for everybody and way too much fat and sugar to be good for you but tasty nonetheless.

The "opposite" of sweet is savory. For instance; biscuits are delicious with jam or a fruit compote but also with a savory dish like Beef Stew.

Jiffy Mix isn't that much different from Cake Mix. The three primary ingredients are wheat flour, corn meal, and sugar.
Cake mix on the other hand is sugar, wheat flour, and shortening.
Contrary to some opinions it is possible to reduce the sugar and fat in some recipes without destroying the integrity of the flavor. I think you would still find sufficient contrast and the missing elements(fat and sugar) would be replaced by the slightly coarser texture. Jiffy Mix comes in a much smaller package too, which would make this recipe better for one or two people. Try it on the Bearded One. wink

Heat cast iron skillet in oven to 425 degrees with about 3 tbsp. of oil.
once skillet is hot, remove from oven and pour about 2 tbsp of the hot oil in to the cornbread mixture and stir. But use one egg and 1 tbsp. of flour in your recipe.
Southern Cornbread Yum...
