I was going to roast beets once...got them home and couldn't deal with them. I know, they are messy and stain everything: cutting board, etc. ...but now that it's spring, you can get yellow beets. Anyhow... Cut the skins off. Cube the beets. Drizzle olive oil and Kosher salt on them. Layer them on a cookie sheet. Bake at 350 oF for 45 mins. Cool, then refrigerate beets. Toss field greens in your favorite vinaigrette. Top with chilled beets. Add crumbled goat cheese and toasted pumpkin seeds.

That reminds me of another Russian dish my relatives and sometimes my dad would make which I just loved.
It's called lazy day Russian meal in my Mennonite cookbook. You put chicken pieces in the bottom of a roaster and bake them part way. Then put white potatoes, sweet potatoes and sliced apples in around it and pour a mixed up yellow cake batter over all of it... You had me until the 'cake batter...'  I would be interested in trying it - if someone else made it.

...I've seen some recipies that demands half a bottle of good quality balsamic vinegar which caremalises.
Never tried that much but the recipie did state to be brave with it! I've done it. Take, say a cup of balsamic vinegar, and place it into a sauce pan and s-l-o-w-l-y reduce it down. It takes a long time. What happens is the sugars in the vinegar concentrate and becomes viscous (syrup-like) and you can drizzle it over some Heirloom tomatoes that have been dipped in olive oil and Kosher salt. It's pretty awesome.

I would be interested in trying it - if someone else made it. I kinda thought the same thing , Rick. Sounds like too much sugar. If I made it, which isn't likely, I think I'd substitute Jiffy Cornbread Mix, it makes awful cornbread that's too sweet and too crumbly but it might tone this recipe down a little bit. Last night I Started with Spring Rolls, then had a Thai Glass Noodle Salad, rolled up in Romaine Leaves(three stars, I started sweating) Then cut a Red Snapper Fillet into one inch cubes, breaded and deep fried them. Chef Rudee made me a special Red Curry sauce with lots of Bamboo Shoots to smother the fish.(four stars, brought tears to my eyes) served with lightly steamed vegetable medley and two Singha Beers. Then a coke, then some water, I don't think I'll ever advance to 5 stars.
Good coffee, good weed, and time on my hands...

That's the point. You'd change it from weird contrasting tastes but remarkably good comfort food to something else altogether. And maybe for you that would be a good thing. I dunno. I agree on paper it doesn't work but in "real" life at least for me it did. The cake mix is sweet but it's tempered by the meat taste (however you describe that) and the tart of the apples and then the two different kinds of potatoes....white and sweet. The batter puffs up of course as the other stuff cooks down and it all kind of mixes together for a very unique and homey taste. Probably not for everybody and way too much fat and sugar to be good for you but tasty nonetheless.

...Probably not for everybody and way too much fat and sugar to be good for you but tasty nonetheless. Why...that's the recipe for quick, fast, meals in America: Too much fat and sugar.

The cake mix is sweet but it's tempered by the meat taste (however you describe that) The "opposite" of sweet is savory. For instance; biscuits are delicious with jam or a fruit compote but also with a savory dish like Beef Stew.

The "opposite" of sweet is savory. thank you! That's the word I was struggling for. I knew it wasn't sour in this case. Savory describes meat taste. Yes.

Jiffy Mix isn't that much different from Cake Mix. The three primary ingredients are wheat flour, corn meal, and sugar. Cake mix on the other hand is sugar, wheat flour, and shortening. Contrary to some opinions it is possible to reduce the sugar and fat in some recipes without destroying the integrity of the flavor. I think you would still find sufficient contrast and the missing elements(fat and sugar) would be replaced by the slightly coarser texture. Jiffy Mix comes in a much smaller package too, which would make this recipe better for one or two people. Try it on the Bearded One.

Heat cast iron skillet in oven to 425 degrees with about 3 tbsp. of oil. once skillet is hot, remove from oven and pour about 2 tbsp of the hot oil in to the cornbread mixture and stir. But use one egg and 1 tbsp. of flour in your recipe. Southern Cornbread Yum...
