I have a Southern Living cookbook from 1985. It's my most precious cookbook.  I also have the complete Williams-Sonoma series of cookbooks as well.

Heat cast iron skillet in oven to 425 degrees with about 3 tbsp. of oil. once skillet is hot, remove from oven and pour about 2 tbsp of the hot oil in to the cornbread mixture and stir. But use one egg and 1 tbsp. of flour in your recipe. Southern Cornbread Yum... Welcome to the Rant Carolinarain! Adding the hot oil to the cornbread batter is a new on on me, I've had kind of a hankering for Cornbead and Blackeyed peas lately so I'll give it a shot.

Rick, I cut my teeth on an old 70s version of Joy of Cooking that I bought new around '73. I built up a huge collection of cookbooks which eventually culminated in my Purchase of The Culinary Institute of America's "The New Professional Chef" I've since tossed out most of the cookbooks in between and those two are the only ones I ever use. The internet is where I grab most of my new recipes these days, unfortunately a lot of very bad cooks have published a lot of very bad recipes online. It sometimes takes a discerning eye to sort the wheat from the chaff.

Rick, I cut my teeth on an old 70s version of Joy of Cooking that I bought new around '73. I cut my teeth on a 1930s or '40's version my dad used when he was stationed in London during WWII. Now I'll read back and see why we're talking about Mrs. Rombauer. (sp?) Her sauerbraten is great--even if it takes a week.

I'm not a purist, however. I do like strawberry jam on my cornbread or muffin very much. For awhile, I was making cornbread with sharp cheddar cheese and jalapenos, which taste very good, but I keep going back to basic cornbread.

I'm making chicken and dumplings for Sunday dinner tonight. Dad has requested custard pie for dessert.

OH! I love custard Pie! You do your own crusts, right? Easy with a Kitchenaide mixer, a pain in the ass with a pastry blender. I had Pad Thai with Lobster Tails for supper. I cut up a case of chicken for Chef Rudee tonight after closing and halfway through she handed me the lobsters and told me to cook my supper. I made a Pad Thai with vegetables(four star), split the tails and marinated them briefly in Pad Thai sauce then right after I tossed in the bean sprouts, put them on top of the noodles, threw a lid on the wok, cranked the heat and let them steam for maybe three minutes.
Rick. didja know if you brush your pie crust with egg white before you put the custard in it keeps your crust from getting soggy. Just toss the extra yolk into the custard mix.

Wow! If I'm ever in dire straights, I'll have to remember to find a job working in a quality restaurant. The only one I ever worked in was McDonald's for a summer back in the 60's. Our "free lunch" was limited to $1.35 worth of their food (if you can call it that). I thought I was hot stuff by ordering a Big Mac with two "canine specials" (patties) to make a Triple Mac. Lobster Pad Thai: Now that's living!
