OH! I love custard Pie! You do your own crusts, right? Easy with a Kitchenaide mixer, a pain in the ass with a pastry blender. I had Pad Thai with Lobster Tails for supper. I cut up a case of chicken for Chef Rudee tonight after closing and halfway through she handed me the lobsters and told me to cook my supper. I made a Pad Thai with vegetables(four star), split the tails and marinated them briefly in Pad Thai sauce then right after I tossed in the bean sprouts, put them on top of the noodles, threw a lid on the wok, cranked the heat and let them steam for maybe three minutes.
Rick. didja know if you brush your pie crust with egg white before you put the custard in it keeps your crust from getting soggy. Just toss the extra yolk into the custard mix.
