I like to skin, core and scoop out the seeds in one bowl and cut the tomato in chuncks into another. When I'm done I run the bowl of skins,cores and seeds through a juicer. I rerun it through several times untill the seeds come out crumbly and then throw the seeds into the compost pile. The juice is combined with the chunky tomatoes to become salsa sauce,past or ketsup. Usually I run the onions, a cayenne pepper and garlic through the juicer too because cutting the onion up stings my eyes and the pepper burns the skin on the back of my hands.

When I dry tomato halves I save the juice and strain the seeds and skins with a mesh colinder. I then boil down the strained juice untill it thickens and spoon it into the tomato halves with some sea salt. I dry in a dehydrator until leathery. They have more tomato flavor than when I don't add the juice.
