I browned the beef, but I just tossed in the onion chunks raw. Does it really make a difference (not sweating the onions and possibly leeks) when you are simmering the stew for an entire day? sweating the onions adds some sweetness and complexity to their flavour, as scout says the puree also adds colour as well as another subtle note. A good stew is like a melody! And I forgot the mustard powder (colmans english)! We'll run out to our nearest Tesco and pick that right up! Oh wait! They just left the U.S. because they lost $1.5 billion. Never mind.

Colman's dry mustard powder is actually very easy to find in US supermarkets. That's what I got the last time I needed some dry mustard for a recipe, and I think it was the only dry mustard they had at Albertson's.

My aunt, who lived in Baton Rouge, LA used to make a dish that had tomatoes, bell pepper, onion, celery, rice, diced ham and small-sized shrimp. I know that there is some Cajun seasoning in it. I'll eat it, but I pick out the shrimp, since I don't like shellfish.

I first learned about Cajun years ago by watching Justin Wilson on NPR. I liked his style. I didn't realize it, but I had been using the Cajun holy trinity- onions, celery, and peppers- even before I heard about Cajun cooking.

Last night, I made a really quick one pot meal. Mr. Scoutgal loves them. 2 boneless, skinless chicken breasts cut up into small pieces, rice, sliced mushrooms, frozen peas and diced celery in a gravy. I saute some onions and the celery with a little garlic, add the mushrooms and cook until soft. Add in the chicken and cook. I then add one packet of chicken stock, and 1/2 box of chicken broth. I make a slurry of flour and the rest of the chicken broth and add that to the mix. Then I add the rice and frozen peas. I season to taste with salt, pepper, poultry seasoning and parsley. I cook this until the rice is done and the liquid has become a gravy. Salad completes the meal. You can also serve with bread, if you are not watching your carbs.
