It takes a little muscle and a good pair of poultry shears but it cooks in half the time and the end result is truly amazing. I'm thinking of buying some poultry shears. What brand do you recommend?

Mine aren't this good, but you asked what I'd recommend. J.A. Henckels is well known for their quality knives. http://www.amazon.com/Henckels-Inte...&sr=1-39&keywords=poultry+shearsWhen I've done this to chickens I haven't raised the oven temperature but I'm looking forward to boosting it all the way up to 450. A chicken should cook in under an hour.

And you can use those shears to easily cut it apart for serving.

I justt looked at the reviews and there are a couple problems with those shears. The spring rusts and the locking mechanism is sometimes a problem. These get better reviews. http://www.amazon.com/Kitchen-All-P...1&sr=1-8&keywords=poultry+shearsOXO gets pretty good reviews too. I paid about $15 bucks for mine at least that many years ago and they work fine.

I have cooked chicken in the oven at 450 degrees before. Not by spatchcocking but by another method I had read about. It came out great with the skin crispy and the meat juicy but it smoked up the house like a mofo with chicken fat a popping and smoking on the sides of the super heated oven.
So beware. Perhaps there is a way to mitigate that. If so-let me know.

I roast all my meat out in the summer kitchen. The oven out there is an old 1950s un-vented Thermador wall oven. Nothing escapes from it until I open the door.
