It makes very moist and creamy scrambled eggs and is generally referred to as "French" scrambled eggs. French chefs usually use a whisk but the spatula that Ramsey Gordon uses works much better. I find the fluffy "American style" scrambled eggs to be rather dry and unappetizing. I've got chickens so Roscoe and I eat a lot of eggs. You also don't get as much volume so Sammy may only get eggs with one meal if you cook them this way.

Vegan eggs are hard to come by... maybe Trader Joe's? I try to stay away from highly processed stuff. The only plant burgers I eat are Engine 2's which i can only get at Whole Foods sadly and I don't think there is one close to my new location. In fact, I will have to travel aways to get my usual foods.

I'm going to die. No matter what I eat. I applaud and respect your ethical choices but I'm a foodie and a cook and those choices are not for me.
My eggs are the best that can be had from happy healthy free range chickens. I know them each personally.

Almost impossible to make "vegetarian eggs": Eggs where the chickens only eat vegetables. Chickens really like eating insects, so keeping them vegetarian means keeping them inside in a sterile environment. You also have to keep insect protein out of their feed.
Easier just to give up eggs, but I know vegans who do that tend to suffer some nutritional problems in the long run. Eating a few eggs, a little cheese, etc. is better for you.

The way chickens are treated is awful. Overall they probably receive the most unnatural, inhumane, and disgusting treatment of any livestock. Though pigs run a close second these days. Those who choose to be vegetarian or vegan on ethical grounds will get no flack from me. Chickens are fun silly birds and a pleasure to have around. The eggs I eat for breakfast are so fresh they are often still warm when I gather them. I think anyone who can should have a backyard flock.
