In Girl Scouts, we used to make box oves. We would cover a cardboard box with Aluminum foil, and set it on a metal plate. We'd set in hot coals and then bale a cake, cookies or biscuits in it. I loved doing that! Are you drunk now?

Ever heard of La Caja China? (La Caha Cheena) It's Mexican thing mostly. Food blog? Nah. There's a million of them out there and I'm a lazy man. If I spent much time doing that I'd never get the kitchen cleaned up from whatever I've been cooking.

I like the old Hawaiian method:
Burn a pile of wood into hot coals, down in a hole several feet deep. As the fire burn down, put porous lava rocks into the fire. When the rocks are hot, put them (with tongs, obviously) inside the dressed pig. Put the pig in the hole on top of the coals. Put the remaining hot rocks on the outside of the pig. Cover it all with wet ti leaves on top. Cover that with wet burlap bags (or tapa cloth if you are a purist). Come back in about 8 hours and luau! Got to get it hot enough to cook the trichinosis parasites. Use lots of water, so it all gets steamed.
Or better yet, go down to a BBQ place and order a pulled pork sandwich.
But still, I think it is interesting that barbeequed pig is as old as humans lighting fires. We probably barbeequed pigs like this before we learned to speak.

That reminds me: I just read a book by a lady who says she cured (or at least remitted) her MS by going on a paleolithic diet. She wants us to eat hunted wild meat, cooked as little as possible or even raw. She says it has made her MS go away.
I'll tell you why her MS has quieted down: She has a huge parasite load, and parasites survive by turning down your immune system. Her autoimmune disease is quiet because she is dying from trichinosis, etc.

I like the imu method of cooking a pig myself. Watching the luau hosts dig up the pig is a lot of fun!

According to the Centers for Disease Control and Prevention, only five Americans were diagnosed with the disease in 2004, and most of them probably got it from eating wild game. (Between 1997 and 2001, 31 reported cases were caused by wild game, while only 8 resulted from eating domestic commercial pork).
In the past, pigs were infected with trichina worms from eating raw meat scraps. Today, most eat grain-based pellet food, similar to dog chow. Organically raised pigs munch grass. It’s illegal to feed raw meat to pigs raised commercially. Hence, trichinosis has been virtually eliminated.
Pork can contain the same disease-causing bacteria as any other meats—salmonella, E. coli, and other nasties. As for how much to cook your pork, go by temperature, not color. The USDA recommends that pork be cooked to an internal temperature of at least 160 degrees, though chefs like Jonathan Zearfoss, culinary arts professor at the Culinary Institute of America, advocate for less. “From a purely aesthetic standpoint, I think 145 is well past the desirable temperature,” he says. This will usually be enough to kill off E. coli and salmonella. But be warned: Since today’s pork is very lean, cooking it at a higher heat can dry it out.
