Then again going off topic but hey that’s what I do. My dad liked to eat steak and kidney pie. My mother, bless her heart, knew we (meaning me and my sister) hated it. So she did not make us eat it, rather she made it specifically for dear old dad. Sometimes when she was cooking it I would come home from school and smell the kidneys frying in the cast-iron pan. It smelled like somebody pissed in the frying pan and reduced it down to nothing.

God damn that was disgusting.

A senior mentor of mine in kidney pathology went over to England and figured it was his duty as a kidney specialist that he should try steak and kidney pie. He said "It was distinctly uriniferous!" Pathologist arent really into eating organ meats, it way to much like work. Many pathology interns turn vegetarian for a while, as walking past the Kroger's meat display was similar to work. Its fun eating with pathologists when they point out that little scar in your steak and start running through the differential diagnosis for it. Tumor, abscess, parasite etc, or just trauma. Weight loss is common in Pathology residents.
Dont even get me started on chitlins...

The most amazing thing about livers is how they can regenerate, if you just give them a chance. They can take a single lobe from a living related donor, and that will keep the recipient alive and grow into a full-sized liver. The donor's remaining liver lobes also grow back into full-size.

I went on an Aleutian Island expedition on a Scripps Institute research ship many years ago, to look at harbor seal kidneys and their reaction to 45 minute dives with no blood flow. The surgeon (and transplant pioneer) I was working for didn't like the fact the seals the Fish and Game hunters were shooting were "going to waste". So he collected some livers along with the kidneys we wanted to study. Then he had the ship's cook prepare them. He and the other chief investigator ate them for dinner. I passed.

But rumaki is actually pretty tasty: That's water chestnut and chicken liver, wrapped in bacon, and broiled. I think the key is a lot more bacon than liver!
