Your concern seemed to be about depletion of nutrients from the soil. Nutrients are drawn by the plant from the soil and stored. If the plant or parts of the plant are removed from that farm and consumed elsewhere those nutrients are not returned to the farm's soil. The solution to that is to either keep the produce local (and eventually retrieve the nutrients) or not keep it local and supplement the soil with manufactured fertilizers and additives. There is always a trade-off.
