It's delicious and easy! I use a chicken broth base, but if you're vegan, a vegetable stock works well. I add about 1/4 cup of half-and-half, but if dairy bothers you, don't add it and it still tastes great. It also taste good- some say better- the next day when refrigerated.

It's good, and it freezes well. Other than chicken and beef stock, I never froze soup before. I tried it and didn't bother removing the potatoes, as I read somewhere that you're supposed to do before freezing. However, it still tasted really good.

Lew Family recipe for fried wonton

1 package(50 count) wonton skins
1 lb ground meat(pork, beef, chicken or turkey)
2 diced green onions
1 tablespoon minced garlic
1 head Napa cabbage or bok choy finely chopped
1 can water chestnuts, diced
1 cup sliced mushrooms, diced
1 tablespoon soy sauce
1 teaspoon ground black pepper

You can combine all the veggies into a food processor or grinder, then add to ground meat and seasonings. Mix well. Fill and cook wontons as shown in video below. Traditionally, peanut oil is used, as it has a higher smoking temperature. But any oil can be used. I use canola oil, since some in my family are allergic to peanuts.

My wife's friend gave us a Tahitian Squash she grew in her backyard garden. A bit obscene looking, but quite delicious. My wife has made baked squash, steamed squash, vegetable stew, stir fry, and squash soup so far and we still have about 1/2 the thing left!

It is very sweet, unless you refrigerate it where the sugar turns to starch. But interesting thing is that you can chop off as much as you want and then just wrap a bit of plastic wrap around the cut end and leave it out on the counter. We served some baked at Christmas dinner, and the same squash is still good just sitting there at room temperature!

It does have some seeds in the middle of the spherical part at the end, but none at all in the long, thick "stem".
