Useful information. I use bay leafs in my soups and stews. About the only thing that I can add is to buy quality ones. In some ways, it's like cooking with wine. If you won't drink it, then don't cook with it.

This poor gal had a wilted leaf salad with dandelion leaves instead of lettuce.

It is just now spring, here in Missouri. The dandelions are not depressed because they haven't been mowed yet, so I have clumps the size of half basketballs. The leaves are tender and green and succulent. And healthy, since I haven't used chemicals on this land in a good 16 years.

OK. Everything I did to the dandelion leaves after washing was probably not healthy. I cut up 5 strips of bacon and fried them, adding chopped garlic (mine from last year) just before the bacon was brown. I removed the pan from the heat, added about 1/4 to 1/3 cup of balsamic vinegar, then threw in about 1/2 pound of dandelion leaves ... flipped and flopped them to get them coated and finally, turned the skilled load into a bowl ... so the bacon pieces would be on top.

So yummy!

Update on using young dandelion greens.

I substituted dandelion greens for spinach in a quiche. Very nice.
