Indirect heat the coals are placed to the side with a drip pan (I just fold some heavy weight aluminum foil into shape)beneath the food as opposed to direct heat where the food is directly above the coals and drips onto the coals. Approximately how much time do you give them on each side no matter what method you use? The thighs and leg quarters do have more flavor.
